Watermelon and Arugula Salad

Ingredients

  1. 1/2 pound baby arugula leaves
  2. 2 pounds seedless watermelon, 3/4-inch-diced (3 pounds with the rind)
  3. 1/3 cup good olive oil
  4. 1/4 cup freshly squeezed lemon juice (2 lemons)
  5. 1 teaspoon kosher salt
  6. 1/2 teaspoon freshly ground black pepper
  7. 1/2-pound chunk Parmesan cheese

Instructions

  1. Place the arugula and watermelon in a large bowl. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour enough dressing on the arugula to moisten. Toss well and place on 6 salad plates.
  2. With a very sharp knife or a vegetable peeler, shave the Parmesan into large shards and sprinkle them on the arugula and watermelon. Sprinkle with salt and serve.

This was just delicious! I was unsure about the tartness of the dressing so I added a tablespoon of honey to the mix. Even those of us who didn’t really care for arugula loved it! Will definitely be making this again.

I originally wasn’t sure if I would like it, but I Love it. You get sweet from the watermelon, bitter from the arugula, sour from the lemon juice, salty from the salt in the dressing, not to mention the pepper. It’s an explosion of flavors for your palate.

this is a delicious combination and presentation. the dressing is a perfect compliment…doesn’t need a lot of dressing, just enough to moisten the arugula and melon…I served this with Ina’s filet from her steakhouse steak episode with her sautéed mushrooms, Ina’s baked potatoes with whipped feta….great dinner and nice presentation. The potatoes are delicious rolled in fresh thyme, rosemary and lemon rind..the whipped feta has a hint of lemon rind too and it all just goes together perfectly

I wanted to try this recipie as a trial for my new D-I-L’s bridal shower. I always worry about dressings with too much lemon. This was perfect for the arugula I didn’t have a chunk of parm so I just threw on a handful when it was ready. Fabulous, just fabulous. Don’t change anything!
