Warm Watermelon Salad

When we were little, my mother in England used to create this simple gingerbread house recipe. It was always the year’s biggest success. To create doors, windows, walkways, and a garden, use your creativity and a variety of candy. The completion of this gingerbread mansion takes two to three days. For décor, you can purchase a variety of candies.

Ingredients

  1. 6 cups cubed, seeded watermelon
  2. ¼ cup grapeseed oil
  3. 1 cup chopped scallions
  4. 2 tablespoons sliced jalapeno peppers
  5. salt and ground black pepper to taste
  6. 1 tablespoon chopped fresh parsley

Instructions

  1. Place watermelon in a large bowl.
  2. Heat grapeseed oil in a skillet over low heat; cook and stir scallions and jalapeno peppers until fragrant and warmed, 1 to 2 minutes. Spoon scallion mixture over watermelon; season with salt and pepper and toss to coat. Sprinkle parsley over salad.
  3. Grapeseed oil can be replaced with a very good extra-virgin olive oil.
  4. Use a paring knife to poke the seeds out of your watermelon cubes.
