Warm Beet-Orange Salad

Instructions

  1. Place 1 pound beets on a large piece of foil. Drizzle with 1 tablespoon olive oil and 3 tablespoons water; close into a packet. Roast at 400 degrees F until tender, 50 minutes. Peel the beets and cut into wedges. Whisk 1/3 cup orange juice, 2 tablespoons olive oil, and salt to taste in a bowl. Add 2 segmented oranges, the beets and 1/4 cup chopped toasted walnuts and toss.

Really delicious from a person who has never eaten beets before! This salad was easy to make but we did add a couple of ingredients: the zest and juice of one lemon and the zest of one orange. At dinner time I even went back for seconds!

Delicious and so easy!  I have fixed this with fresh beets (preferable, other than cost) as well as canned (I’d be thrilled to find canned beets in glass jars in my area!). I added a bit of sugar to the walnuts while toasting and added crumbled goat cheese on top when serving over a bed of butter lettuce.  YUMMMM!

I love this! It was just posted up and I love trying out new recipes – I had some baby golden beets (not as colorful mixed with the oranges but so, so good! The extra crunch of the nuts are a great addition!

I am no lover of beets, and I love, love, love this recipe. I made it with fresh beets from my wife’s garden. Never knew that oranges paired so well with beets. I have another pound of fresh beets in the fridge, and can’t wait to make again. The grocery store only had Godzilla size oranges, so I only used one instead of the called for two.
