Walnut-Shaped Cookies with Dulce de Leche

  5.0 – 1 reviews  • Sandwich Cookie Recipes

a tomato, onion, and jalapeno-based salsa that is really Mexican. Use as an ingredient in many Mexican dishes or serve with tacos, nachos, tortilla chips, black beans, fajitas, or refried beans. It is a side dish that is enjoyed by my family with grilled meat. This pico is not for the faint of heart; it is for those who enjoy it hot. The majority of individuals in my circle enjoy the heat. If you don’t enjoy foods that are quite hot and spicy, you might want to try something milder or reduce the amount of jalapeno and substitute a pepper that you like more.

Yield: 1 dozen

Ingredients

  1. ½ cup butter, softened
  2. ⅓ cup white sugar
  3. 1 egg, lightly beaten
  4. ½ teaspoon vanilla extract
  5. 1 cup all-purpose flour
  6. ¼ teaspoon salt
  7. 1 (13.4 ounce) can dulce de leche

Instructions

  1. Beat butter and sugar with an electric mixer until fluffy. Mix in egg and vanilla extract. Add flour and salt and mix until just incorporated; overmixing will make the dough too stiff. Cover the dough with plastic wrap. Refrigerate for 30 to 60 minutes, or up to overnight.
  2. Preheat the oven to 375 degrees F (190 degrees C).
  3. Press about 1 teaspoonful of the chilled dough into the bottom and up the sides of each walnut-shaped mold. Place the molds on a baking sheet.
  4. Bake in the preheated oven until browned around the edges, 12 to 18 minutes. Cool for a few minutes. Lightly tap on the bottom of the mold to pop out the cookies. Let cool until easily handled.
  5. Spoon some dulce de leche onto the bottom of each cookie and sandwich the halves together.
  6. Other thick fillings can be used, such as any nut butter or Nutella(R).
  7. Nutrition data for this recipe includes the full amount of dulce de leche. The actual amount consumed will vary.
