Walnut Cherry Delights

These can be iced with an icing made from 2 cups powdered sugar, an egg white that has been lightly beaten, and 2 teaspoons of water or maraschino cherry juice. If you’d prefer, you may make these cookies without the maraschinos and substitute candied cherries instead.

Servings: 6
Yield: 1 dozen

Ingredients

  1. 1 cup all-purpose flour
  2. ⅓ cup white sugar
  3. ½ cup butter, softened
  4. 2 eggs
  5. 1 ½ cups packed brown sugar
  6. ¼ cup all-purpose flour
  7. ½ teaspoon baking powder
  8. 1 cup chopped walnuts
  9. ½ cup maraschino cherries

Instructions

  1. Preheat oven to 350 degrees F (180 degrees C). Grease a 9 inch square pan.
  2. Mix 1 cup flour, white sugar and butter by hand. Pat into pan. Bake for 8 – 10 minutes.
  3. With a whisk, beat 2 eggs. Whisk in brown sugar, then add 1/4 cup flour and baking powder. Stir in nuts and cherries. Pour over baked crust.
  4. Bake for 20 – 25 minutes more.

I found this recipe and a very similar one, which I made first. I wanted to see if this one was better than the first one, which I thought was perfect. No, this is not. This one I liked, but it is not as delicious as the other one.

These cookies were the hit of our Christmas cookie exchange (and do not need the icing)…we made 2 batches…they were so popular, we had to make a 3rd!!!
