Waffle Iron Cornbread

When trying to maintain his weight during the wrestling season, my son would only eat hot pasta with fresh vegetables. Thinly slice some leftover steak or chicken and combine it with the tomatoes for a “full” supper.

Ingredients

  1. 1 cup yellow cornmeal
  2. ½ cup all-purpose flour
  3. 1 teaspoon baking powder
  4. ½ teaspoon baking soda
  5. ½ teaspoon salt
  6. ¼ teaspoon ground paprika
  7. 1 ½ cups buttermilk
  8. 3 tablespoons melted butter
  9. 1 egg, slightly beaten

Instructions

  1. Preheat and lightly grease a waffle iron according to the manufacturer’s instructions.
  2. Whisk cornmeal, flour, baking powder, baking soda, salt, and paprika together in a bowl. Stir buttermilk, butter, and egg together in a separate bowl; stir into flour mixture until batter is just blended.
  3. Ladle 1/2 to 3/4 cup batter into the preheated waffle iron; cook waffle according to manufacturer’s instructions until golden brown, about 5 minutes. Repeat with remaining batter.

Loved this! It is so much easier to eat then standard cornbread, it isn’t crumbly! We enjoyed this with taco soup, it was wonderful. I used the Greek yogurt/milk substitution for the buttermilk, as I only had powdered buttermilk substitute and I find it can make batters a bit thin. The yogurt worked fabulously, it was about 3 T with milk added to make 1.5 cups. This is a keeper, thank you!

I followed this recipe exactly and the batter was really soupy. I didn’t realize before but apparently I prefer sweeter cornbread because this just didn’t do it for me. With some tweaks (addition of sugar and less buttermilk) it could probably be a great recipe.

Good, not great. I should have read some reviews first… I agree with everyone who ended up with runny and soupy batter. I cooked the first waffle exact to recipe and it was just off. Added another 1/2 Cup flour and it got better. Another sprinkle of flour made them as good as they were going to get. I’m estimating that 1 cup of milk is plenty! I also agree with the honey additions. With some tweaks this is going to be really good.

I didn’t add full amount of buttermilk to this. Would have been really soupy. Added gradually and it was a cup at the most. But they were very yummy.

This is so good! I added some cheese and topped with honey. Also, I had to add 1.5Tbsp oil to the batter to prevent sticking to the waffle iron.

it was a good base for a cornbread waffle. I added 1/2 of vanilla and 5 tablespoons of sugar. perfection!

The only change that I made was by adding 1 Tbl. of brown sugar. I served the waffles as a bread with a hearty vegetable and bean soup. The waffles were perfect to dunk into the soup.

Loved this! In the summer here in the desert, the last thing I want to do is crank up the oven, but we so desperately needed cornbread to go with our posole last night. I didn’t have buttermilk, so I started with a about 3 tablespoons of greek yogurt and then added the milk to the 1.5 cup mark. Great cornbread idea without heating up the whole house. Now where’s the biscuit version?! 🙂

This is a good basic cornbread recipe for your waffle iron. I like my cornbread sweet, so I added about 1-2 tablespoons of honey and a tablespoon of sugar.

My batter was very runny and took a very long time to crisp. But over all a crunchy corn bread. Went good with my fried chicken. Just a little butter and honey

Very good recipe! I made chicken and waffles tonight for dinner and I thought these waffles would go perfectly with them,Boy was I right!! My only change was I separated my egg and whipped my egg white! These waffles are terrific! very very tasty!!
