Ingredients
- 4 chicken breasts with ribs and skin, cut in half
- 4 ears corn, save husks
- 4 lobster tails
- 1 pound shrimp in shells, deveined
- 24 littleneck clams
- 2 pounds small red potatoes, cooked
Instructions
- In a very large pot put small amount of water in bottom of pan and bring to a boil. Place rack in the bottom of the pan. Chicken goes in first, rib side down, with a layer of cornhusks on top. Cover and cook for about 5 minutes. Then, layer the corn, lobster, shrimp, clams and potatoes on top of the chicken. Cover and cook until shellfish is pink and chicken is cooked throughout.

I have made this dish at least nine times . I have doubled this for dinner parties . Everyone just loves it–and everyone is very very impressed with this one dish feast. I make a green salad and fresh cole-slaw with some french bread and butter. Marie in Boca Raton Fla.
