My mother has a fantastic vegetarian crock pot recipe. For meat aficionados, adding ground turkey or grilled chicken to the final result is fantastic. You might also add diced tomatoes with an Italian flavor.

Ingredients

  1. 1 (32 fluid ounce) container vegetable broth
  2. 1 (16 ounce) package frozen cheese-filled tortellini
  3. 1 (8 ounce) package cream cheese, cut into pieces
  4. 1 (8 ounce) package fresh spinach
  5. 1 cup sliced crimini (‘baby bella’) mushrooms

Instructions

  1. Stir vegetable broth, tortellini, cream cheese, spinach, and mushrooms together in a slow cooker.
  2. Cook on Low for 5 to 6 hours.

So, after carefully reading all of the reviews and assessing the outcome of what I did, this is what I would recommend. Use low heat on slow cooker. Start with broth, cream cheese, 1 teaspoon salt, 1 teaspoon black pepper, 1/8 teaspoon red (cayenne) pepper, 1 freshly chopped clove of garlic. Heat 1 hour. Then add 1.5 cup mushrooms and heat 1 more hour. Then add 19 oz tortellini and heat 2 more hours. Then add 10oz spinach and heat 1 more hour. So 5 hours total. Stir at least every 30-60 minutes to break up the clumps of cream cheese. Not sure if I’ll make this again. Family liked it but it wasn’t a home run out the park. Good basic standby, easy to make.

This was excellent. I am not vegan/vegetarian, but my vegan sister in law loved it. In fact, everyone did! Be sure if you use frozen spinach that you don’t put it in frozen, as it will make the broth way too watery. You want the broth to be a little thicker.

Love this soup. It has turned into a favorite for the family. Usually cook chicken a hour before and get a good broth. Then add everything except spinach. Add that the last 20 mins! Sooooooooo goood!

Thank you for this recipe! I love to use my crock pot. I thought it was delicious but a little liquidy. I made this after coming from the grocery store do ma tortellinis had probably defrosted a bit, so I stopped cooking it about an hour before the time because I was afraid tortellinis might get mushy since they weren’t frozen solid. I’m added some parmesan cheese as dished out, which thickened the sauce. I think the leftovers will be fine. I think next time, I might let the broth and cream cheese cook for an hour or so, then add tortellinis and mushrooms and about an hour before it’s finished add fresh basil and fresh spinach. Regardless, this was delicious and 5 stars. My daughter loved it and I’ll probably make it for her friends game night.

Tortellini fell apart and cream cheese was about chunky until I stirred it making the mushy tortellini worse. Will not make again!

This was tasty and filling. I had refrigerated cheese tortellini, and by the end of the time many of them had broken open. If I make it again, I would definitely use frozen. I love mushrooms, so next time I’ll add a lot more mushrooms.

I made it ! I don’t really cook but this was easy . I added garlic , sea salt and pepper. Also o only cooked about 2 1/2 hours . I didn’t want pasta to dry out . Very good

I halved the recipe, except for full cup of mushrooms. I used bone broth and fresh chard from my garden, added 2 cloves of garlic. I also used mushroom tortellini from the refrigerated dept. and cooked it in my Instant Pot for 20 min at high pressure. Delicious!

So, following this recipe, what you will end up with is a paste that may be used as a gorilla glue substitute. Make sure you double the Vegetable broth is you want a soup.

Super easy recipe and delicious! I didn’t add all of the specified amount of veggie broth (I didn’t want it to be soupy and I didn’t have the full amount on hand) and I think next time I’ll use cream of mushroom soup instead of the cream cheese. I did add sliced black olives and a little bit of sweet potato just because I like them. I might also add some garlic for a more robust flavor. All in all, I’m glad I tried this recipe!

I only give this recipe 2 stars because it was very easy and vegetarian. Its flavor was lacking and my SO and I found it difficult to eat because it was so bland.

This is really good and easy to make. I’m going to shorten the cook time. The tortellini got a little too soft for my taste.
