Ingredients
- 2 teaspoons olive oil
- 8 ounces soy sausage, cut into 1-inch pieces
- 2 cloves garlic, minced
- 1 cup marinated artichoke hearts, quartered
- 1 cup sliced yellow squash
- 1 cup baby squash or sliced zucchini
- 1 cup sliced carrots
- 1 bunch asparagus, ends trimmed, cut into 2-inch pieces
- 1/2 cup frozen green peas
- 14-ounce can diced tomatoes
- 6 to 8 saffron threads
- 1/2 teaspoon paprika
- 2 bay leaves
- 2 cups cooked rice
- 1/2 cup reduced-sodium vegetable broth
- 1/4 cup chopped fresh parsley leaves
- Salt and freshly ground black pepper
Instructions
- Heat oil in a large paella pan or skillet over medium-high heat.
- Add soy sausage and garlic and cook 2 minutes. Add artichokes, squash, zucchini, carrots, asparagus, peas, tomatoes, saffron, paprika, and bay leaves, bring to a simmer and cook 5 minutes. Add rice and broth and cook for 5 minutes, until liquid is absorbed. Remove from heat, remove bay leaves and stir in parsley. Season, to taste, with salt and black pepper.

I rarely write reviews anymore for recipes that I choose and make (and I pick a different one to make practically every night, but this was good and I had to speak up since saw some reviews on here stating it was bland. Mine turned out delicious, even the hubby said so! It is easy to make and healthy. I used TJs organic brown rice and Spanish saffron (although I don’t feel the saffron was necessary, and Tofurkey Italian sausage, which added a LOT of flavor. I also added some red bell pepper, with the other veggies, which turned out nice. Next time I think I will substitute broccoli for the artichoke hearts (I did not add the liquid, and did use some chicken stock instead. But it was yummy and I will keep making it. Thanks to the reviewers who advised to watch the liquid…it turned out perfect!
this recipe is great and it makes a good amount so it reheats really well. My husband isn’t a dinner without meat fan, so I used some smoked chicken that we had stored in the freezer and it was really good! Also I used minute brown rice and just threw it in with the dish so it could absorb all the juices and it was great.
I like the flavor but like one of the previous review – cooked the sausage separately then combined.
Wow – absolutely wonderful flavor – I added more paparika (smoked and used yellow rice – since saffron is super expensive – cooked a little longer – used tofukry brand kielbasa – amazing and no one would guess it was vegetarian. My family (who i’ve been trying to convert to meatless was super impressed.

This was okay. Something different. It needs more flavor though. It’s a great base recipe build from and was a good side dish.
Not too bad but was missing something. Has all kinds of pontial if you know how to make changes to your liking. Im more of a follow it to a T kinda guy.

I did what others had suggested and left out the broth after adding the liquid from the artichoke hearts and it was the perfect consistency. However, I did feel that the recipe was lacking some flavor. It certainly wasn’t bad, but next time I make it, I will add some additional spices
I used an italian flavored soy sausage. I also did not use the artichokes and used a fresh tomato. Because of this, I didn’t have the liquid it expects to simmer in, so I just added chicken brother a little earlier. Also no parsley or bay leaf (simply because I didn’t have them) but the flavor from the sausage more than made up for it.
I really liked all the flavors combined. All the veggies gave some much flavor to the rice. Hey my kids loved it with all those vegggies in it….so it has to be good.
