Ingredients
- 1 (16 ounce) package gnocchi pasta
- 4 tablespoons butter
- 1 cup sliced baby portobello mushrooms
- 3 cups baby spinach
- 3 tablespoons chopped fresh basil
- 2 tablespoons chopped garlic
- 2 tablespoons grated Parmesan cheese
- 1 teaspoon chopped fresh parsley
- salt and ground black pepper to taste
Instructions
- Bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, 2 to 4 minutes. Drain and set aside.
- Meanwhile, melt butter in a large saucepan over medium heat. Add mushrooms and saute for 2 minutes. Toss in spinach, basil, garlic, Parmesan cheese, parsley, salt, and pepper. Cook and stir until spinach is wilted and sauce begins to thicken, about 5 minutes. Add gnocchi and stir until coated in sauce; cook for 2 more minutes.
- Any hard Italian cheese, such as provolone, can be used in place of Parmesan.

Very good. I added roasted chicken and a splash of white wine while the spinach was wilting. Two T of garlic was too much.
This turned out way better than anticipated. The gnocchi is the ideal pasta to cook with the recipe as it is creamy. I added extra garlic and mushrooms but otherwise stuck to the recipe. Will definitely make again.
I made this recipe pretty much as is as I had a couple of constraints especially with the amount of gnocchi needed. I was unable to find the full pound. Still, I must say that it is excellent. I used frozen spinach that I thawed in the microwave. Since we are not vegetarians, I added cooked bacon. It was fantastic. I must say that the suggestion of adding more Parmesan is spot on. I will make this again with my one little change: the amount of butter. I was OK with using half the amount the recipe calls for and also would add the garlic to the mushrooms around the time they are cooked through instead of adding it as the recipe indicates to let the garlic cook until it becomes fragant. With or without the bacon it is very, very good.

This was very good. All of the flavors married well for a delicious flavor. We enjoyed it so much that it only served 2 as a main course!

Delicious and easy once the prep work is complete! I read the reviews and took the suggestion to add both white wine and a little cream to the ingredients while they were simmering. Added some garlic powder, sea salt and ground pepper, too. At least two full cups (if not more) or mushrooms to make each bite hearty. Didn’t have fresh parsley on hand but that didn’t matter. Meal came out great!

Made it the same as the recipe and it’s delicious. I used baby bells and shiitake mushrooms. Next time I think I may try it with broccoli and maybe a red bell peppers too!

I made this with homemade gnocchi using potatoes and ricotta, added a little white wine, and this was delicious. I served it to 8 college students/young adults and they all raved about it. I made sweet italian sausage to serve with it for the non-vegetarians. It was a great meal, easy to prepare, and hearty.

This recipe works well if 2 C Great Northern beans replace the gnocchi and add 3 C chicken broth to make into a soup
This was a good relatively quick dish and easy to make. I did make a couple changes. First, 4 tablespoons of butter was definitely not enough liquid for dish. I added couple tablespoons of extra virgin olive oil. I also added sun dried tomatoes which definitely gave the dish a needed kick. Will make again. Thanks.
I loved this recipe! I used 2 teaspoons of dried basil because I didn’t have fresh, and I added an extra teaspoon of fresh parsley and extra mushrooms. I can’t wait to eat the leftovers tonight!

I’m not a vegetarian. This was okay for “meatless Monday” but I took a star off because of the instructions. Basil is too delicate of an herb to be put in at the same time as the spinach. Quick tip. Put your spinach at the bottom of your colander when you drain the gnocchi it will wilt the spinach
