Ingredients

  1. 2 cups water
  2. 1 cup brown rice
  3. 3 cups frozen green beans
  4. 3 tablespoons olive oil, or more as needed
  5. 2 tablespoons crumbled feta cheese, or to taste
  6. 1 pinch ground black pepper to taste

Instructions

  1. Bring water and brown rice to a boil in a saucepan; cook until rice has softened, 15 to 20 minutes. Drain.
  2. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add green beans, cover, and steam until tender, 2 to 6 minutes.
  3. Heat olive oil in a large skillet over medium-high heat. Saute green beans and rice in hot oil until lightly crisped, 5 to 10 minutes. Stir in feta cheese; drizzle olive oil over the top and season with black pepper.

I didn’t know I needed to cover and simmer the rice to cook it enough. So, I had to add water and time to get the rice from crunchy to soft. For veggies we added steamed broccoli and peas. So delish! To me this recipe tasted like a rice pilaf more than a fried rice. It was good especially when I added soy sauce.

This simple recipe was exactly what I was looking for! I actually took the easier way out and used 3 min brown rice and canned french cut green beans. the flavors work together well.

Very Good as is (besides needing a bit of salt, IMO), but awesome w/ a couple little additions…I did use olive oil cooking spray to cut down on the fat and that worked fine. Cooked the green beans and the rice as instructed. The feta gave this a nice twang, but when I tasted it I felt it needed something more. I added in some minced garlic and a drizzle of sesame oil (maybe 1/2 teaspoon) and that did the trick, SO GOOD! We really, REALLY enjoyed this along w/ our fish for dinner tonight…Thanks so much for the idea, I will be making this again and again~YUM!!!!
