Ingredients

  1. 8 ounces uncooked spaghetti
  2. ¼ cup vegetable oil
  3. 2 cups fresh sliced mushrooms
  4. 1 onion, chopped
  5. 1 cup shredded carrots
  6. ½ cup sliced red bell peppers
  7. 2 cloves garlic, minced
  8. 2 cups fresh bean sprouts
  9. ½ cup chopped green onions
  10. 1 cup chicken broth
  11. 1 tablespoon cornstarch
  12. ¼ cup hoisin sauce
  13. 2 tablespoons honey
  14. 1 tablespoon soy sauce
  15. 1 teaspoon grated fresh ginger
  16. ¼ teaspoon cayenne pepper
  17. ¼ teaspoon curry powder

Instructions

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  2. Heat oil in a large wok or sauté pan. Stir-fry mushrooms, onion, carrots, peppers, and garlic until tender. Stir in bean sprouts and green onions; cook for 1 minute.
  3. Mix chicken broth and cornstarch in a small bowl and add to stir-fry. Stir in hoisin sauce, honey, soy sauce, ginger, cayenne pepper, and curry powder. Cook and stir until thickened and bubbly.
  4. Add cooked spaghetti; toss to coat.

This turned out to be a big hit with the family! My grandson actually asked if I would make it again! I did have to double the recipe for us in order to have leftovers for lunch the following day, but there wasn’t any left! I followed the recipe closely since this was the first time making it although I did add more bell pepper because we like it. Planning on making it soon again!

We use this recipe all the time. We use real lo mein noodles, double the sauce and the more veggies the better!

Don’t use cayenne or curry. Use some rice wine vinegar, more ginger, and sesame oil. Sriracha is you want spicy. Lo mein noodles aren’t hard to find. Why use spaghetti?

Loved this! I made as directed except I didn’t have bean sprouts or soy sauce so used smaller amount of fish sauce. Makes a huge amount!

I have a gluten allergy so ordering lo mein isn’t something I can do. Very happy that there’s a good recipe here that I can adjust to fit gluten free. Made it for dinner n me n my husband were very happy with it. Didn’t have hoisin sauce so I just added a little more soy sauce, still was very good. Thank u.

This was a good base for the lo mein dish. I found it a little bland though. I followed most of the recipe but followed others advice and cut out the honey. I like fish sauce in my oriental dishes so I added that as well as some rice wine vinegar but I just couldnt get the flavor I was looking for. I will make this again and experiment a little more for my taste. Good starter recipe.

This is the best vegetable lo mein recipe that we have made yet. We didn’t add honey but we did add 1T. of vinegar because we believed it needed a little acid. We made garlic, ginger buttered shrimp as a side dish. Thank you for sharing.

I made the recipe with all the ingredients except green onions and bean sprouts. It came out really good. The longest part of the process was prep. It also had a good kick to it. I didn’t not put any meat in it but it was still filling. Can’t wait to make again.
