This recipe comes from my family. This decadent chocolate cake has a unique twist—it is entirely vegan. A scoop of ice cream on top of this cake and some chocolate or vanilla frosting go wonderful together! A few mint leaves make me feel extra elegant!

Ingredients

  1. 1 ½ cups all-purpose flour
  2. 1 cup white sugar
  3. ¼ cup unsweetened cocoa powder
  4. 1 teaspoon salt
  5. 1 teaspoon baking soda
  6. 1 cup water
  7. ⅓ cup vegetable oil
  8. 1 tablespoon distilled white vinegar
  9. 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch round baking dish.
  2. Sift flour, sugar, cocoa powder, salt, and baking soda together in a bowl. Add water, oil, vinegar, and vanilla extract, to flour mixture and beat until smooth, about 1 minute. Pour batter into baking dish.
  3. Bake in preheated oven until toothpick inserted in center comes out clean, about 30 minutes. Cool on a wire rack for 1 hour before removing from baking dish.

My friend is vegan and when I heard about this recipe I decided to make it for our girl’s night. It was very delicious. We drizzled a bit of vegan chocolate sauce on the top and it was perfect. The price of eggs right now is ridiculous, so I think this is also a good inexpensive alternative. I will definitely make this cake again in the future.

I made cupcakes out of these and they were awesome. I mixed all the ingredients except the vinegar. Stirred it in at the last minute which is why I think it had such a nice rise. Added 1/2 c cranberries and 1/2 c of walnuts. Delicious. Also made a glaze of powdered sugar, water and almond extract with a pinch of salt . Amped the cupcakes up nicely.

I have been making this cake for years! It is the best chocolate cake ever. My vegan friend loves it and so do my children. I love that you don’t need milk and eggs! Company’s Coming cookbooks by Jean Pare have a similar recipe.
