Vegan Vanilla Nut Oatmeal

For the frosting on her Mother’s Day cake, a friend of mine asked for a light whipped cream mousse. I came up with this solution. Use pudding made with clear vanilla and white chocolate if you want a white icing. Refrigeration is necessary.

Ingredients

  1. ¾ cup vanilla soy milk
  2. ½ cup rolled oats
  3. 2 teaspoons white sugar
  4. 2 teaspoons chia seeds (Optional)
  5. 2 teaspoons chopped almonds
  6. 1 teaspoon vanilla bean powder
  7. ¼ teaspoon sea salt
  8. ¼ teaspoon ground cinnamon

Instructions

  1. Combine soy milk, oats, sugar, chia seeds, almonds, vanilla bean powder, salt, and cinnamon in a saucepan over medium heat. Cook and stir frequently until thickened to your preference, 5 to 7 minutes.
  2. You can use 1/2 teaspoon of vanilla extract in place of the vanilla bean powder.
  3. You can use coconut or maple sugar, if you prefer.
  4. Use any nuts of your choice.

This is good, but it needs a full cup of milk for me; I used almond instead of soy. I used quick oats, so I cooked them in the microwave for 2 minutes. I didn’t have vanilla powder, so I used 1/2 tsp vanilla extract.
