Vegan Tropical Smoothie

A delicious three-chile, tomato-based salsa that is vegan. It has a fantastic flavor because the tomatillos and chiles are dry roasted (slightly blackened) on an iron skillet. wonderful for green chilaquiles.

Ingredients

  1. 1 cup mixed frozen berries
  2. 1 banana
  3. ½ cup frozen strawberries
  4. ¼ cup shredded coconut
  5. 1 tablespoon chia seeds
  6. ¾ cup orange juice

Instructions

  1. Place frozen berries, banana, strawberries, coconut, and chia seeds in a blender; pulse briefly to combine. Pour in orange juice; blend until smooth.

This is basically an acai bowl as a smoothie. It’s very good but you’ll need a toothpick handy! I’ve made it two ways now: exactly as written* and also with the addition of a tablespoon of creamy peanut butter – both excellent. Next time I think I’ll mix granola with it and just eat it with a spoon. *I guess I didn’t make it exactly as written since both times I’ve used frozen blueberries in place of the mixed berries. No photo added but it turns out just like the picture with the recipe.

I loved how cold and refreshing this was on a hot summer day. I used unsweetened coconut and loved that a hint of coconut flavor came through with no added sweetener needed. I followed the recipe exactly except for using a frozen banana. I definitely needed my high end blender for this one, but it turned out to be a thick, sweet smoothie that I will make again.
