Ingredients

  1. cooking spray
  2. 3 large sweet potatoes
  3. ¼ cup vegan butter
  4. ½ cup almond milk
  5. ⅓ cup maple syrup
  6. ¼ cup orange juice
  7. 1 teaspoon vanilla extract
  8. ¾ teaspoon ground cinnamon
  9. ¾ teaspoon ground nutmeg
  10. ½ teaspoon salt
  11. ¾ cup chopped pecans
  12. ½ cup brown sugar, packed
  13. ⅓ cup unbleached all-purpose flour
  14. ¼ cup vegan butter
  15. 2 tablespoons maple syrup

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Coat a casserole dish with nonstick cooking spray.
  2. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 10 to 20 minutes. Drain and return to the pot. Add vegan butter and mash to the desired consistency. Add almond milk, maple syrup, orange juice, vanilla extract, cinnamon, nutmeg, and salt. Pour into the prepared casserole dish.
  3. Combine pecans, brown sugar, flour, vegan butter, and maple syrup in a bowl and sprinkle over casserole.
  4. Bake in the preheated oven until hot, about 45 minutes.

Easy peasy and delicious. Changes: microwaved sweet potatoes instead of boiling them to minimize nutrient loss (plus it’s quick and easy), used honey 1:1 instead of maple syrup, used 2T bottled lemon juice+2T H20+1T sugar instead of 1/4 cup OJ, and microwaved topping mixture to promote easier mixing. Next time to try: soy milk instead of almond milk, substitute almond butter for vegan butter, cut nutmeg in half and add an equal amount of clove. NOTE: It has the right amount of cinnamon!

I would say maybe do a little less orange juice. But we did only have 3 SMALL potatoes vs 3 large, so maybe that was the problem because you could taste the orange juice at times. Overall was good!

Super good recipe!!! A bit too much cinnamon for me but still good. I love the topping and I suggest at least doubling the amount called for so the top can be covered. My boys gobbled it up and had no idea that it was Vegan.
