Vegan Pumpkin Overnight Oats in the Slow Cooker

You can cook food with or without sugar, and then after cooking, each person can add their preferred sweetener on top.

Ingredients

  1. 2 ½ cups water
  2. 1 cup steel-cut oats
  3. 1 cup almond milk
  4. 1 cup canned pumpkin puree
  5. 1 teaspoon vanilla extract
  6. 1 teaspoon pumpkin pie spice
  7. ¼ teaspoon salt

Instructions

  1. Combine water, steel-cut oats, almond milk, pumpkin puree, vanilla extract, pumpkin pie spice, and salt in a slow cooker.
  2. Cook on Low for 8 hours.
  3. For a non-vegan version, add 1/2 cup honey before cooking.
