Vegan Orange Cranberry Cookies

The crust produced by this recipe for thick crust pizza dough is somewhat crispy on the exterior and soft and doughy on the inside. To create a wonderful pizza, top it with your preferred sauce and toppings.

Ingredients

  1. ¾ cup white sugar
  2. ½ cup margarine
  3. 1 orange, zested
  4. 1 ½ teaspoons vanilla extract
  5. ¼ teaspoon salt
  6. ¼ teaspoon baking powder
  7. 1 ½ cups all-purpose flour
  8. 1 ½ cups dried cranberries
  9. ¼ cup unsweetened applesauce

Instructions

  1. Preheat oven to 425 degrees F (220 degrees C). Grease 2 baking sheets.
  2. Beat sugar, margarine, orange zest, vanilla extract, salt, and baking powder together in a large bowl until blended. Stir in flour, applesauce, and cranberries until dough is well combined.
  3. Drop dough onto baking sheets by tablespoons, 2 inches apart; flatten slightly.
  4. Bake in the preheated oven until edges are golden brown, 6 to 7 minutes. Let cool for 5 minutes; transfer to a wire rack to cool completely, about 15 minutes.
  5. Be careful not to over-bake or cookies will be hard, not soft and chewy.
  6. Store cookies in an airtight container to keep them soft.
