Ingredients
- 2 cups all-purpose flour
- 1 cup white sugar
- 1 cup uncooked quick oats
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 2 (8.25 ounce) cans mandarin orange segments, drained, liquid reserved
- ¼ cup vegetable oil
- ¼ cup milk chocolate chips
Instructions
- Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.
- Whisk flour, sugar, oats, baking powder, and salt together in a bowl.
- Measure out 1 cup of reserved mandarin orange liquid; add liquid and vegetable oil to flour mixture and stir until batter is well-combined. Fold oranges and chocolate chips into batter. Spoon batter into prepared muffin cups.
- Bake in the preheated oven until golden brown, about 25 minutes.
Reviews
These rose nicely and looked pretty. I really wanted to like them. But, they are bland, and the chunks of orange segments were weird in texture. The predominate taste is flour and oats. I think some spice is needed, maybe a little cinnamon and nutmeg.
