Ingredients
- ¾ cup vegan dark chocolate chips
- ¾ cup aquafaba (chickpea water)
- 1 tablespoon white sugar
Instructions
- Melt chocolate in top of a double boiler over simmering water, about 5 minutes. Remove from heat and let cool.
- Beat aquafaba in a stand mixer on high speed until firm peaks form, 10 to 15 minutes. Add sugar gradually into the mixture while continuing to beat. Fold in cooled chocolate gently.
- Spoon mousse into small glass cups and chill in the refrigerator for at least 4 hours before serving.
- You can also melt the chocolate chips in a microwave-safe bowl in 15-second intervals, stirring after each melting, 1 to 3 minutes total.

Disaster! I’m guessing that temperatures need to be specified in the recipe. The aquafaba was cold because it had been in the fridge waiting for me to whip it. It whipped easily into soft peaks. The chocolate had cooled but not to room temperature. Not only did it fail to mix homogeneously, but it also broke the aquafaba back into liquid — that despite my very gentle folding. The result looks a little like chocolate chip soup with a bottom coating of solid chocolate. It tastes delicious, but it ain’t mousse.
I had my aquafaba in the refrigerator for 3 days and it whipped up in less than 4 minutes. Absolutely delicious. Thanbks for sharing your recipe.
This is lovely, particularly if you’re keeping things light. My first attempt at using aquafaba, and it was a total success. The liquid had been refrigerated and only required 6 minutes to whip with my hand mixer. The taste is great, particularly topped with the raspberries suggested.
Whipping up the aquafaba it looked just like heavy whipping cream – I never would have guessed. This was delicious and SO easy and a big hit with all my guests, not just the vegetarians.
