Vegan Chocolate Blended Baked Oats

The fastest tuna casserole we’ve ever made! It can also be “fancyed up” by placing it in a baking dish, covering it with fried onions, and placing it under the broiler for a short period of time.

Ingredients

  1. cooking spray
  2. 1 cup rolled oats
  3. ⅔ cup almond milk
  4. 1 large ripe banana, mashed
  5. 2 tablespoons cocoa powder
  6. 2 tablespoons maple syrup
  7. 1 teaspoon baking powder
  8. ½ teaspoon vanilla extract
  9. ⅛ teaspoon salt
  10. 2 tablespoons vegan chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Spray two 8-ounce ramekins with cooking spray on the bottom and sides.
  2. Combine oats, almond milk, banana, cocoa powder, maple syrup, baking powder, vanilla extract, and salt in a blender. Blend until all is combined well, 30 to 60 seconds. Fill mixture into the prepared ramekins and sprinkle each with 1 tablespoon chocolate chips.
  3. Bake in the preheated oven until firm, about 25 minutes.
  4. I tried both old-fashioned oats and quick oats and thought both worked out the same.
  5. The texture will change if these sit, and the next day they will be very dense; however, I still enjoyed mine reheated in the microwave.
  6. You can use the same amount of coconut sugar or agave syrup in place of maple syrup.

Great recipe no eggs and ingredients that are in the house. Great for meal prep. You don’t need ramekins just small pyrex bowls. I made this with carob powder and carob chips for my 2 y.o. grandbaby to avoid caffeine and she ate this heartily. It’s not very sweet and we like that, topping with syrup may suit others better.

Excellent recipe, tasted like having chocolate cake fir breakfast! I added an egg to increase the protein, added some espresso powder and replaced one tablespoon of maple syrup with stevia. I will definitely make this again.

Delicious. Added some natural peanut butter, and the microwaved portion the next day was almost as yummy. Making it again tomorrow.
