Vanilla Raspberry Trifle

My grandmother, who reared 11 children and three grandkids, had a favorite recipe that has been around for more than 100 years. Every time I serve this cake, people ask me for the recipe.

Ingredients

  1. 2 (3 ounce) packages ladyfingers
  2. ½ cup rum, or to taste
  3. 1 pint raspberries
  4. 4 cups cold milk
  5. 2 (3.5 ounce) packages instant vanilla pudding mix
  6. 1 orange, zested
  7. 1 pint heavy whipping cream
  8. 1 (2.25 ounce) package slivered almonds

Instructions

  1. Line the bottom of a deep glass dish with 1/2 the ladyfingers. Pour 1/2 the rum over ladyfingers; top with 1/2 the raspberries.
  2. Beat cold milk, pudding mix, and orange zest together in a bowl using an electric mixer until smooth, about 2 minutes. Spoon 1/2 the pudding over raspberry layer. Arrange the remaining lady fingers atop pudding layer and around sides of bowl. Pour remaining rum over ladyfingers; top with remaining raspberries and pudding. Refrigerate trifle for flavors to set, about 1 hour.
  3. Beat heavy cream in a bowl using an electric mixer on medium-low speed until fluffy. Spoon whipped cream over trifle and sprinkle with almonds.
  4. Keep in mind the liquor is optional for a more child-friendly dessert. Strawberries work just as well in place of raspberries. As far as bowls go, we use two types. I have one that is tall to help with the layering. But we have on many occasions just used a wide glass bowl that’s only about 3-inches deep and just done one layer.

This is a really pretty dessert that is soooo easy to make. Used canned whipped cream to save time. Not kid-friendly, but a nice, adult holiday treat. You can buy single-serving trifle dishes at Walmart for less than two dollars each!
