Vanilla Cranberry Can Cakes

Ingredients

  1. 2 (17 1/2-ounce) boxes blueberry muffin mix (recommended: Krusteaz)
  2. 2 cups white cranberry juice
  3. 2 (16-ounce) cans whole cranberries, drained and rinsed (recommended: Ocean Spray)
  4. 2 1/2 cups shredded coconut, toasted
  5. 2 teaspoons vanilla extract
  6. 2 teaspoons ground cinnamon
  7. 1 egg

Instructions

  1. Preheat oven to 400 degrees F. Spray the inside of 5 (16-ounce) cranberry cans (or similar) with cooking spray.
  2. In a large mixing bowl, combine muffin mix, juice, cranberries (save the remaining contents from the other 3 cans for pancakes!), coconut, vanilla, cinnamon, and egg. Stir to combine. Divide batter among the prepared cans and place cans on a baking sheet. Bake in oven for 25 to 30 minutes, or until tester comes out clean.

Where in the world can you find (16 oz) cans of whole cranberries (Ocean Spray)??? I searched grocery store after store – – even looked when I went out of State. No one ever even heard of them whole in a can, so I wrote to Ocean Spray 3 times. I must have gotten someone from a thrid world country who was reading my question. Each time I wrote I underlined 16 oz can of whole cranberries. She kept telling me whole cranberries weren’t on the market until the Fall. I told her I didn’t want fresh cranberries, that I had 3 bags of them in my freezer. Then she told me they didn’t have 16 oz whole cranberry SAUCE in cans, that they didn’t come in that large of a size. It took me 24hours each time I had to email them. Finally I gave up – – – no recipe is worth that much frustration!! Now I’m stuck with 2 boxes of Krusteaz blueberry muffin mix, and a HUGE bottle of white cranberry juice. Also, how do you get 3 cans of blueberries from 2 boxes of the mix?? Finally, only 1 egg seems like too little for this recipe from what I’m reading about how dry this recipe is. Live and learn – – – I spent a lot of money on a recipe I can’t use. If I remember correctly, I went on a neverending search for Southwestern Cheddar Cheese soup as an ingredient for another recipe of Sandras. Each time I’m in another town or State, I always check the soup shelves but NO LUCK. I’d like to know where she shops!!

I thought this was the cutest idea and made a batch for gifts for family. I loved the taste (they were dry, but I love dry baked goods, I always buy day old). My family was less thrilled about getting them in a can. I tried to clean the labels and glue off, but some must have still been stuck on there. My nephew cut his finger on the edge of the can and my mother-in-law started asking my husband if we were having financial problems. I thought they were so elegant decorated with scrapbooking supplies, but I guess they just looked cheap.

Sandra says, “Oh, yeah. I’m going to add one egg.” Then she over-beats the pancake batter even more, once she remembers to add the egg!! Not worth trying.

My kids friends thought they were the coolest thing & ate them right from the can…At first they were hard to get out of the can but I just opened the other end & pushed them right out..

i think these were delish but yea a lil dry. but while they were still warm i put a scoop of vanilla ice cream in the center and it was heaven!!!!

We didn’t like the taste or the texture of the muffins plus they were impossible to pry out of the can.
