Ingredients
- Cooking spray
- Flour tortillas (white, red and green)
- 1 to 2 teaspoons onion powder
- Salt and freshly ground black pepper
- 4 cooked chicken breast halves, cut into 2-inch pieces
- 2 cups sliced beets (jarred or canned)
- 1/4 cup freshly chopped scallions
- 3 tablespoons cider vinegar
- 2 tablespoons olive oil
- 2 teaspoons Dijon mustard
- 4 Bibb lettuce leaves
- 1/3 cup crumbled goat cheese
Instructions
- Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray.
- Using the Halloween-themed cookie cutters, cut tortillas into fun shapes. Arrange tortillas on prepared baking sheet and spray with cooking spray. Season the tops with onion powder, salt and black pepper. Bake for 6 minutes, until crisp.
- Meanwhile, in a large bowl, combine chicken, beets and scallions. Toss to combine, allowing beets to color chicken. In a small bowl, whisk together vinegar, oil and mustard. Pour mixture over chicken mixture and toss to combine. Season, to taste, with salt and black pepper.
- Serve salad in lettuce leaves and top with goat cheese. Serve tortilla chips (ghouls) on the side.

Delicious and totally Halloween-appropriate! I hand-cut out ghosts with the tortillas and they were very cute. The dressing is simple get surprisingly tasty. Plus I love beets so this salad was quite appealing to me. Also very healthy!
I had goat cheese on hand so decided to try this recipe. I also added dried cranberry’s and slivered almonds. Added juice from a squeezed whole orange and the zest of the orange to the dressing.Turned out very flavourful and delicious!
