Tzatziki Guacamole

Cornish game hens are cheerful and widely accessible. I’ve even served them as the main course during a holiday feast. Compared to traditional holiday roasts like lamb or ham, these small birds cook significantly more quickly. For every two visitors, I usually estimate serving one hen (weighing between 1 1/2 and 2 pounds), especially if you also want to serve a first course and a dessert.

Ingredients

  1. 4 ripe avocados, peeled and pitted
  2. ¼ cup minced garlic
  3. 2 tablespoons lemon juice
  4. ⅓ cup plain yogurt
  5. ⅓ cup sour cream
  6. 1 cup diced English cucumber
  7. ¼ cup chopped fresh mint
  8. ¼ cup chopped fresh dill
  9. 3 tablespoons chopped fresh cilantro
  10. 1 ½ tablespoons red pepper flakes
  11. salt and ground black pepper to taste

Instructions

  1. Combine avocados, garlic, and lemon juice in a bowl; mash into a paste using a fork or spoon. Mix in yogurt and sour cream. Stir in cucumber, mint, dill, cilantro, red pepper flakes. Season with salt and pepper. Cover and refrigerate for at least 1 hour before serving.
  2. This recipe should be mixed by hand with either a fork or a spoon. Using a blender or food processor does not obtain the same results.

Due to personal preference I swapped the measurements around for the mint and cilantro. A little bit of mint goes a long ways with us. With that being said, this was great! If you love mint then I say put it all in. I do feel as written it would need more cilantro. Then again, some people feel the same way about cilantro as I do about mint. I served this with chips to go with fajitas but it would be great as a spread for a sandwich or wrap. This one is a keeper!
