Ingredients
- 1 cup full-fat Greek yogurt
- 1/4 cup finely diced cucumber
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh mint, chopped
- 1 tablespoon olive oil
- 1 clove garlic, grated
- Zest of 1 lemon
- Kosher salt and freshly ground black pepper
Instructions
- Combine the yogurt, cucumber, dill, mint, olive oil, garlic, lemon zest and salt and pepper to taste in a mixing bowl and mix well.

Easy and delicious
I followed this recipe to the letter minus the mint as I forgot to purchase it! It was delicious! I will try with mint next time.
I made his vegan with cashewmilk yogurt. Also added a little more garlic. Turned out delicious!
Awesome! So many recipes only add lemon juice but not the zest, the zest takes it to another level. As someone else mentioned, seed the cucumber before dicing 🙂
