Ingredients

  1. 1 (16 ounce) package uncooked spaghetti
  2. ½ cup butter
  3. ½ cup all-purpose flour
  4. 3 cups chicken broth
  5. 2 cups milk
  6. 1 ⅔ cups grated Parmesan cheese
  7. 4 cups chopped cooked turkey

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish.
  2. Bring a large pot of lightly salted water to a boil. Add spaghetti, and cook for 8 to 10 minutes or until al dente. Drain, and place in the prepared baking dish.
  3. Melt butter in a medium saucepan over medium heat. Stir in flour. Mix in chicken broth and milk. Cook and stir until the mixture comes to a boil. Stir in about 1 1/3 cups Parmesan cheese, and remove from heat.
  4. Mix chicken broth mixture and turkey with spaghetti. Top with remaining cheese. Bake 1 hour in the preheated oven, until surface is lightly browned.

I love this and it’s a family favorite! I use rotisserie chicken or turkey. If I use turkey I add a dash of sage. I add a dash of garlic powder for chicken or turkey. I make my vegetable on the side (I have picky eaters). I make the noodles firm so they aren’t mush when I bake.

See Most Helpful Positive Review by Rebecca Jo. I followed her advice and sauteed celery, fresh mushrooms and onion. I added the flour with the cooked veggies in the pan to make a roux. You really don’t need to remove the veggies. I then added the broth, milk and grated parm (I just used Kraft), Italian seasoning and brought it to a boil. I poured the thickened mixture to the 9 x 13 greased baking dish which already had the cooked spaghetti and chicken meat (or turkey) and used my tongs to toss the mixture with the pasta and topped with additional cheese. Warning: This fills the baking dish to the top. Check it after 30 mins. No way should it cook for an hour. It’s a simple recipe that is quite good.

This is a great base to add other veggies and spices! Overall, the recipe is good. However, I’m surprised I don’t see any complaints about the baking time. I baked mine, uncovered, for an hour at 350 and it came out completely dry and crusty! Unfortunately ruined it. I’ll try to make it again b/c I think its a good recipe, but would bake it for half the time or at least cover it!

I didn’t love this. I felt like it was a good base, but just needed more flavor. I think next time I might add a bunch of garlic — or at the very least tons of salt and pepper.

So happy I found this recipe! We had a ridiculous amount of turkey left over from Thanksgiving and I really wanted to make a casserole. I substituted penne pasta for the spaghetti. Then I added steamed broccoli florets and sautéed chopped shallots. This casserole was a huge hit! Looking forward to making this recipe again with rotisserie chicken. Delicious, easy and very filling!

It is a good basic recipe, but needed some tweaking to make it less bland. First, sauté in oil & butter 1 small chopped onion, fresh garlic (to taste) and finely chopped celery (about two stalks). Add sliced fresh mushrooms and sauté until mushrooms are soft. Remove sautéed vegetables before making a roux. Cook flour in a couple of tbsp of butter. Add about 1/4 cup of white wine to the cooked roux, before adding milk and cheese. DO NOT use the canned Parmesan cheese, use freshly grated. Add cracked pepper to taste and small amount of poultry seasoning, if desired (personal preference). Pour cheese sauce over the pasta. Mix in frozen, rinsed petite peas. Cook seasoned bread crumbs on a pan with butter till moistened and sprinkle over top of casserole. TIP: Make sure there is enough sauce to pasta ratio, it should be a bit runny because the pasta will absorb liquid while baking. Otherwise it will be too dry. Adding a small can of evaporated milk will make the sauce creamy.

Great comfort food dish! Like others I added celery, onion, mushrooms, half a can of cream of mushroom condensed soup, garlic, carrots and breadcrumbs on top. Excellent!

add some chopped celery to the onion & garlic and sauteed in olive oil until tender. Set aside the sauteed vegetables and make a roux in a separate saucepan with the flour & olive oil. Use linguine instead of spaghetti. Add pepper and salt to taste. Top with seasoned bread crumbs with melted butter on top and bake about 1/2 hour.

This was a very good base recipe. I made it as written first and it was good. The next time I had leftover chicken from a rotisserie one I bought. I added 1/2 onion and 3 cloves of garlic and sautéed them in a little butter and added them when I added the chicken. I also served it with a little black pepper on top. Both of my picky teenagers even loved it.

What can I add other than my raves for this recipe? It was so tasty and as long as you follow the basics of the recipe you can be flexible and add what you have on hand and it still comes out easy, very tasty, and a new keeper. Very good!

Made this recipe for my family and it was a hit. I topped it with shredded mozzarella and it got very bubble and delicious. Plenty of sauce too. Some recipes skimp on the sauce and the casserole dries out. Not with this recipe!

Delicious! Four stars because I added spices like fresh garlic, minced onion, and black pepper to add extra flavour. I also added grated mozzarella to the top and baked it for about twenty minutes. Will definitely make this again.

First time ever making turkey tetrazzini and it was amazing! The cream sauce was fairly easy to make. I added about 1/2 cup of frozen peas and 1/2 cup canned mushrooms. I shredded fresh Parmesan for the top of the casserole. Hubby said it was his all time favorite!

I appreciate the simplicity of this recipe. Very good, a nice comfort food. I didn’t bother baking it, added a can of peas. My hubby was happy, we’ll make this again.
