Turkey Sausage and Pepper Skillet

With Parmesan, sun-dried tomato pesto, and couscous, roasted walnuts, sauteed onion, mushrooms, and garlic pair splendidly. If you’d like, add cooked chicken and more vegetables to make a full meal. For an increase in plant-based protein, I frequently add shelled edamame.

Ingredients

  1. 2 tablespoons olive oil, divided
  2. 4 sweet Italian turkey sausage links
  3. 1 large red onion, chopped
  4. 1 red bell pepper, cut into 1 1/2-inch chunks
  5. 1 green bell pepper, cut into 1 1/2-inch chunks
  6. 3 cloves garlic, minced
  7. ½ teaspoon crushed red pepper, or more to taste
  8. salt and ground black pepper to taste

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook turkey sausages until they begin to brown and firm up, 3 to 4 minutes per side. Remove to a cutting board and let cool slightly before cutting into 1/2-inch thick diagonal slices; they will not be completely cooked at this point.
  2. Heat remaining 1 tablespoon oil in the same skillet over high heat. Quickly stir-fry onion until it begins to brown, about 1 minute. Add peppers and continue cooking over high heat, stirring constantly, until peppers begin to brown, 2 to 3 minutes. Do not overcrowd the skillet in order to get a nice char on vegetables. Mix in garlic and cook for 1 minute.
  3. Return sausage, and any accumulated juices, to the skillet. Season with crushed red pepper, salt, and pepper and reduce heat to medium. Stir to combine and continue cooking until sausage is no longer pink in the center, about 2 minutes more.
  4. I sometimes use hot Italian turkey sausage instead of sweet.

Only change I made to it was I added mushrooms to it as well. Also used smoked turkey sausage too. All in all great recipe, great flavor, will definitely make again.

This was amazing! I had to use chicken sausage because I was unable to find the Turkey sausage in my town, but it was delicious. I might try adding corn next time to add something a bit sweet.

Very good. Always a bonus when something is quick and easy. The only downside was the spicy crushed red pepper. Couldn’t get my kids to eat it because it had some kick. Next time I will cut the crushed red pepper in half when preparing. It adds great flavor but is a bit spicy for the younger crowd.

This recipe was good. I made it as written and ate it over rice. The turkey sausage I used broke out of it’s castings which make them look a little uglier, but still tasted good. I think it could have use a little sauce of some sort to go with this dish. I’ll make this again.

I made this as my main course for dinner, and my whole family loved it! This such an easy recipe with lots of room for your own creativity. I had some squash to get rid of, so I diced that up and added it along with the peppers. I also used turkey sausage patties instead of links, and they worked absolutely fine. It’s hard to beat a recipe that is this simple and also healthy! It’s a mainstay for me, for sure!

Ok, so I made this with a mixture of sweet and regular Italian sausage (I prefer it to turkey sausage; it’s a texture thing). Very flavorful and delicious. I will make it again but, with a sauce per my wife’s suggestion. SUPER EASY to make!
