Turkey Noodle Casserole

With leftover turkey from Christmas or Thanksgiving, make this delicious casserole. This dish is excellent because of the subtle curry flavor. Adapted from a Diana Rattray recipe.

Ingredients

  1. 1 (12 ounce) package egg noodles
  2. 1 (10 ounce) package frozen peas, thawed
  3. 2 cups diced cooked turkey
  4. 2 tablespoons salted butter
  5. 1 (8 ounce) package sliced mushrooms
  6. ½ medium onion, chopped
  7. 2 cloves garlic, chopped
  8. 1 (10.5 ounce) can condensed cream of mushroom soup
  9. 1 ¼ cups leftover turkey gravy
  10. ½ cup milk
  11. ½ teaspoon curry powder
  12. ½ teaspoon poultry seasoning
  13. salt to taste
  14. 1 cup shredded Cheddar cheese

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Butter a 2 1/2-quart baking dish.
  2. Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
  3. At the same time, melt butter in a saucepan over medium heat. Add mushrooms, onion, and garlic; saute until tender, 5 to 7 minutes. Add condensed soup, leftover gravy, milk, curry powder, poultry seasoning, and salt; cook and stir until well blended and hot, about 5 minutes.
  4. Combine cooked egg noodles, turkey, and peas in the prepared baking dish. Pour hot soup mixture over top and sprinkle with Cheddar cheese.
  5. Bake in the preheated oven until hot and bubbly, 25 to 30 minutes.

Delicious casserole! I added a generous dose of seasoning salt. The cooking temp was missing. I baked it at 390 F for 45 minutes. Perfect.

Yummy! Skipped all the mushrooms and I didn’t have cumin.I used cream of chicken. We all enjoyed it and it was so easy.

we have always called this dish turkey tettrazini and an important ingredient not on the list are potato chips on the top of the casserole – but this is a good recipe with ingredients I always have in my pantry as who wants to go and shop after all the work that went into the turkey dinner; not me – straight from the pantry to the oven to the bottom of my grateful stomach

Made as written and this turned out pretty good. I’m typically not a casserole fan or a cream of soup fan but the flavor of this was really good. The one issue I had is that there is not enough sauce to get down into the noodles. I expected them to be “dressed” but they were plain. If I were to make again, I’d double the sauce. Overall this was a good recipe and a great way to use up leftover turkey.
