Ingredients
- 1 (1 1/2-pound) reserved cooked turkey tenderloin, sliced
- 4 cups mixed greens
- 1 cup sliced strawberries
- 2 sliced kiwi
- 1/2 cup dry-roasted, salted cashews
- 1/2 cup reduced-sodium chicken broth
- 2 tablespoons honey
- 2 teaspoons sesame oil
- 2 teaspoons honey mustard
- Salt and ground black pepper
Instructions
- Cut turkey into bite-size pieces and set aside.
- Arrange the mixed greens on salad plates or large serving platter. Top with turkey, strawberries, kiwi, and cashews.
- In a small bowl, whisk together broth, honey, sesame oil, and honey mustard. Season to taste with salt and black pepper. Pour mixture over turkey and spinach salad.

I made the dressing for use on another similar salad. I would say it has potential, but is too thin & bland as it is. The chicken broth is a good idea, & maybe using less of that & more of something else (like oil that would allow the mixture to thicken & emulsify would help. I used more of everything except the broth, adding sesame seeds as well, & it still was lacking something.
I love trying new salads to mix up the typical chef salad. The combinations were so awesome and I LOVE incorporating fruit. The dressing was sweet, but not too sweet. Absolutely loved it and will definitely make again!
I was not going to make a turkey thanksgiving dinner and bought a pre-cooked turkey breast just to make this recipe. I waited a few days after tanksgiving and the kiwi was a bit riper than i would have liked-make sure you use ripe but not over ripe kiwi’s. i loved this recipe! the dressing was a little more savory than i would have liked. I used dijon, use a honey dijon or add more honey mustard. i served it with some potato rolls. my hubby and bro-in-law loved it. will definitely make it again, maybe next time i will try a rotissery chicken,
Great flavor for the dressing with almost no fat. I had no kiwi so I used mango and it was wonderful. We also added some dried cranberries for additional texture. Absolutely delicious and HEALTHY dinner! This is a keeper!!
Dressing alone was worth five stars. Absolutely delicious – will definitely make that again. The salad itself was very good, next time I may add some dried fruit for some chewiness and possibly swap the strawberries for banana – love banana and kiwi together.
This salad would have been good if it weren’t for the salad dressing. We didn’t care for the broth–I much prefer a dressing with vinegar.
This is one of the best salads I’ve ever made. My whole family loved it. It is very light and flavorful. A new family favorite!
Wow – This salad was actually very good for being almost fat free. I really liked the way she substituted the chicken broth for oil. Very flavorful and perfect for Spring. Will definitely make again.
