Ingredients
- 4 medium sweet potatoes
- Cooking spray
- 1 pound 93 percent lean ground turkey
- 1 small onion, grated
- 3/4 cup panko breadcrumbs (preferably whole-wheat)
- 1 large egg, lightly beaten
- 1/3 cup ketchup
- 2 tablespoons hoisin sauce
- 1 1-inch piece ginger, peeled and grated
- Kosher salt and freshly ground pepper
- 2 tablespoons unsalted butter, at room temperature
- 2 tablespoons chopped scallions or chives
Instructions
- Preheat the oven to 425 degrees F. Pierce the sweet potatoes all overwith a fork and microwave until tender, about 15 minutes.
- Meanwhile, coat a rimmed baking sheet with cooking spray. Combine the turkey, onion, panko and egg in a bowl. Add half each of the ketchup, hoisin sauce and ginger and season with salt and pepper. Mix with your hands until just combined. Form into a 9-by-11-inch rectangle on the prepared baking sheet. Mix the remaining ketchup, hoisin sauce and ginger in a small bowl with 2 tablespoons water; brush over the meat. Bake until golden and cooked through, 12 to 15 minutes. Turn on the broiler and broil until the glaze is just caramelized, 1 to 2 minutes.
- Mix the butter, half of the scallions, 1/2 teaspoon salt, and pepper to taste in a small bowl. Split the potatoes and top with the scallion butter. Slice the meatloaf and serve with the potatoes. Sprinkle with the remaining scallions.

This is a huge hit in our household. The kids (7 & 4) gobble it up. One of our favorite recipes.
We’ve had this a few times and think it is excellent! I shape the meat into a traditional loaf on the sheet pan though. It adds to the cooking time but it is super moist and we like thicker pieces.
I love the cute shape (mine didn’t touch the sides either, but after it’s chopped up, you can’t tell). I *LOVE* that the cooking time is greatly reduced from the typical 1 1/2 hour meatloaf recipes. The only disappointment was that it tasted too ‘doughy’ so I’m going to cut back on the breadcrumbs next time. Will definitely use this recipe again.
Loved the quick cooking time and the Asian flavored gave it a nice twist that was a nice change, will definitely make again.
Great flavor for such an easy dish. Mine was much thinner than the photo and not 9×11, but i just shortened the cooking time.
This was great! I followed the directions except in 2 ways: I used regular breadcrumbs instead of panko and I sautéed diced onions instead of using grated ones. The flavor was excellent and even better the next day. I highly recommend pairing the meatloaf and sweet potatoes as suggested because they go very well together. I especially appreciated the superfast cooking time. One note, though: it’s pretty ugly — doesn’t come out neat and square, perhaps because my pan was too large (meaning the meat didn’t touch the sides, making it a nice rectangle) so maybe don’t plan to serve this for a group of people you’re trying to impress. It’s meatloaf, so maybe that goes without saying.
