Turkey Cutlets With Plum Salad

Ingredients

  1. 1 1/2 pounds turkey cutlets
  2. Pinch of cayenne pepper
  3. 1 1/4 teaspoons ground coriander
  4. Kosher salt and freshly ground black pepper
  5. 5 tablespoons extra-virgin olive oil
  6. 3 firm plums, cut into 1-inch wedges
  7. 2 teaspoons fresh lemon juice
  8. 8 cups baby arugula

Instructions

  1. Preheat a grill to medium high. One at a time, place the cutlets between 2 sheets of plastic wrap and pound with a meat mallet or heavy skillet until 1/4 inch thick. Transfer the cutlets to a bowl and toss with the cayenne, 1 teaspoon coriander, 1 teaspoon salt, 1/4 teaspoon black pepper and 1 tablespoon olive oil. Set aside.
  2. Toss the plums with the remaining 1/4 teaspoon coriander, a pinch of salt and 1 tablespoon olive oil. Grill the plums, turning once, until just starting to soften, 3 to 4 minutes. Set aside.
  3. Grill the turkey until cooked through, about 2 minutes per side.
  4. Finely chop a few of the grilled plum wedges; put in a large bowl. Stir in the lemon juice, the remaining 3 tablespoons olive oil and 1/4 teaspoon each salt and black pepper. Add the arugula and toss. Top the turkey with the salad and the remaining grilled plums.

I loved that this recipe used turkey. Did not use peaches, instead used black plums. Delicious and easy!

Made this last weekend. Excellent! I was a little too heavy on the cayenne, but was still great. Also used arugula and spinach (the store only had it premixed) but was still great.  Plan to make it again. First time grilling turkey, not sure why I never did before, but grilling it was great too!

SO GOOD!! Quick and simple and fresh, my husband wanted to eat it again. The lemon and plum dressing for the arugula was my favorite part.

Very good, simple, easy. I could not find turkey cutlets so just used chicken. Grilled the plums in a basket over the grill so they would be easier to manage! Oh and I used a greens salad mix instead of just arugula.

Very quick and easy to make. A great summer lunch or dinner. It was a little bit tart though.
