Ingredients

  1. 1 1/2 pounds ground turkey
  2. 1/3 cup fresh parsley, minced
  3. 1/2 teaspoon ground cumin
  4. 1/2 teaspoon smoked paprika
  5. 2 cloves garlic, minced
  6. 2 shallots, minced
  7. 1 egg yolk
  8. Sea salt
  9. Freshly cracked pepper
  10. 2 tablespoons olive oil
  11. 12 mini burger buns or small soft dinner rolls, warmed in the oven
  12. 12 small lettuce leaves
  13. 12 slices tomato
  14. 1 cup thinly sliced red onions
  15. Mayonnaise
  16. Mustard
  17. Ketchup

Instructions

  1. Mix together the turkey, parsley, cumin, paprika, garlic, shallots and egg yolk in a large bowl. Sprinkle with salt and pepper and mix. Divide the turkey mixture into 12 equal portions and, using your hands, shape into 12 small burgers about 3 1/2 inches wide.
  2. Heat the oil in a pan and cook the burgers until a thermometer inserted into the center registers 165 degrees F, about 3 minutes per side.
  3. Serve the burgers on the mini buns with the lettuce, tomato and onions. Garnish with mayonnaise, mustard and ketchup to your liking.

These were quick and were a hit with the family.  Would make them again! I forgot to add the parsley but no big deal.  Served them on king’s Hawaiian rolls.

The egg yolk keeps the turkey moist and juicy. Past attempts to make turkey burgers ended in tasty but dry and heavy burgers. My family loved these….
