Ingredients

  1. 1/2 cup cucumber, sliced
  2. 1 teaspoon Thai chili paste
  3. 1/2 cup soy sauce
  4. 1 tablespoon fresh minced ginger
  5. 1/2 teaspoon sesame oil
  6. 4 scallions
  7. 1/4 cup rice vinegar
  8. 1/4 bunch cilantro, shredded
  9. 1/4 cup water
  10. 1/4 cup pickled ginger, shredded
  11. 2 tablespoons toasted sesame seeds
  12. 1 pound yellowfin tuna, cut in julienne strips (best to use #1 sushi grade tuna)
  13. 1 cup warm sushi rice
  14. 2 tablespoon toasted sesame seeds
  15. 1/4 cup pickled ginger
  16. 1 tablespoon wasabi

Instructions

  1. Combine all the ingredients. Let set for one hour. Marinate tuna for 15 minutes. Slightly drain tuna and mold with sushi rice. Roll in sesame seeds to “crust” the rice. Garnish with pickled ginger and wasabi.
