Delicious, natural pie filling without added sugar. frozen for potential future use. My husband despises all other apple pies and only eats this one. To suit your tastes, adjust the water and seasonings.

Ingredients

  1. 4 ½ cups thinly sliced apples
  2. 2 ¼ teaspoons lemon juice
  3. 1 ½ cups water
  4. ¼ cup honey
  5. ¼ cup maple syrup
  6. 1 whole vanilla bean, split lengthwise and scraped
  7. ¼ cup cornstarch
  8. ½ teaspoon ground cinnamon
  9. ¼ teaspoon salt
  10. ¼ teaspoon ground nutmeg

Instructions

  1. Mix apple slices with lemon juice in a large bowl to coat apple slices in juice.
  2. Stir water, honey, and maple syrup together in a large pot over medium heat until the honey and syrup are melted into the water; add vanilla bean contents and stir. Mix cornstarch, cinnamon, salt, and nutmeg together in a small bowl; stir into the water to dissolve. Bring the mixture to a boil and cook, stirring constantly, for 2 minutes.
  3. Carefully pour apple slices into the water. Bring water again to a boil, reduce heat to medium-low, cover pot with a lid, and cook at a simmer until apples are tender, 6 to 8 minutes.
  4. Remove pot from heat and remove lid to allow apples to cool to room temperature, at least 30 minutes.

First time making a pie filling, and it was quick and easy. I used mackintosh apples that I had on hand, so they cooked right down and left no recognizable chunks. The honey and maple syrup gave it a nice, interesting flavour. I used the filling to make hand pies. I would make this again.
