Ingredients

  1. 1 (16 ounce) package linguine pasta
  2. ½ cup olive oil
  3. ½ cup pineapple juice
  4. ½ cup no-pulp orange juice
  5. 5 teaspoons grated orange zest
  6. 5 teaspoons lemon zest
  7. 1 teaspoon salt
  8. 1 teaspoon pepper
  9. 5 cloves garlic, peeled
  10. 1 pound medium shrimp – peeled and deveined
  11. 2 tablespoons chopped fresh parsley
  12. 2 tablespoons grated Parmesan cheese

Instructions

  1. Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the linguine, and return to a boil. Cook until the pasta has cooked through, but is still firm to the bite, about 11 minutes.
  2. While pasta is cooking, combine the olive oil, pineapple juice, orange juice, orange zest, lemon zest, salt, pepper, and garlic in a blender. Blend on high speed until smooth.
  3. Pour sauce into a large skillet over medium-high heat. Bring to a simmer and cook for 2 minutes. Add the shrimp and parsley; cook until shrimp are pink and cooked through, 3 to 5 minutes.
  4. Drain the linguini, and place on a serving platter. Spoon the shrimp and sauce over the pasta, and top with a sprinkle of Parmesan cheese.
  5. Cooks Note
  6. For an impressive presentation, top pasta with sliced pineapple rings before spooning on shrimp and sauce.
  7. Lemon juice can be used in place of pineapple juice, if desired.

Too much pepper! The pepper over powers the flavors of the whole dish! I have now learned an important lesson, salt & pepper to taste! …Never to what a recipe states!! I think otherwise this would be a fantastic recipe! I think it would go great with rice and maybe add some broccoli!

This was so good!! I doubled the recipe and it came out great! I added pineapple chunks to the top of the pasta as well before pouring the sauce and shrimp on top. It was surprisingly light and I was so happy that everyone enjoyed it. I will definitely be making it again soon!

I made this for dinner tonight and was not the least bit impressed. Neither my boyfriend or I could finish even half our plates. I think it called for way too much orange and lemon zest. If I try this again I will only used 1 tsp of each and add lemon juice as well.
