Tropical Salsa with Grilled Mango

This creation makes me proud! Grilled chicken, seafood that has been grilled or broiled, and pig are all excellent with this flavorful salsa.

Ingredients

  1. 1 ripe mango, peeled and sliced 1/4 inch thick
  2. 2 teaspoons olive oil
  3. ¼ cup finely chopped red onion
  4. 2 tablespoons finely chopped red bell pepper
  5. 1 jalapeno pepper, finely chopped
  6. 1 lime, juiced
  7. 2 teaspoons white sugar
  8. ½ teaspoon salt
  9. ½ teaspoon ground ginger

Instructions

  1. Preheat an outdoor grill for high heat. In a mixing bowl, toss mango slices with oil to coat.
  2. Lightly oil grate, place mango slices on grill. Cook for 4 minutes on each side, until nicely browned with grill marks.
  3. Remove mango from grill, cut into small cubes, and transfer to a mixing bowl. Stir in onion, red pepper, jalapeno pepper, lime juice, salt, sugar, and ginger. Serve at room temperature, chill until ready to serve, or serve hot by heating through in a nonstick skillet.

Great, simple recipe! Didn’t have any red onion at the time, but sweet onion filled in fine.

We loved the flavor of this. The texture was not so great. I think if I do this again, I would grill less ripe mangos rather than ripened ones – the ripe ones wanted to fall apart – or just use the mango raw. I added a little cilantro, too. Served with a (bottled) mango-chipotle marinated pork loin. Thanks for the recipe!
