Tropical Hearts of Palm Salad with Mango and Avocado

Ingredients

  1. 2 (14 ounce) cans hearts of palm, drained and sliced into 1/2-inch rounds
  2. 1 mango – peeled, seeded, and diced
  3. 1 avocado, diced
  4. ¾ cup watercress
  5. ⅓ onion, sliced
  6. 1 tablespoon chopped cilantro
  7. ¼ cup rice wine vinegar
  8. 1 teaspoon white sugar
  9. ¼ teaspoon ground black pepper
  10. ¼ teaspoon salt

Instructions

  1. Combine hearts of palm, mango, avocado, watercress, onion, and cilantro together in a bowl.
  2. Whisk vinegar, sugar, black pepper, and salt together in a bowl; pour over salad and toss to coat.
  3. For variety, substitute mandarin oranges for mango or add jalapeno for increased spice.

Delicious! Used half a shallot instead of an onion because that’s what I had on hand.

Amazing!!!!!! When I made this I wanted more of a dinner salad. So instead of watercress, I used a mix of spinach and greens and eliminated the cilantro- We just have never acquired a taste for it. Then I took some imitation king crab , shredded and mixed with mayonnaise and put it on top of the salad as serving. I cannot express enough how much the salad was enjoyed and is definitely one that I will be making again. Next time however , I will reduce the amount of hearts of Palm ,as I just found there was too much of it. Take the time to make this salad it’s worth it

A WINNER! This recipe is definitely worth making. Easy to put together, your family or guests will love this salad as a welcome change from the lettuce/tomato version. The crunch of the hearts of palm, fresh watercress and onion compliment the smoothness of the avocado and mango. The dressing, slightly acetic with a hint of sweetness, enhances the palm, avocado and mango. My gang couldn’t get enough of it! I’ll be making this one again very soon.
