A simple, speedy, and excellent dish. As they mix and blend together, the flavors are delightfully distinct.

Prep Time: 15 mins
Cook Time: 30 mins
Additional Time: 15 mins
Total Time: 1 hr
Servings: 8
Yield: 1 2-quart baking dish

Ingredients

  1. 1 (14 ounce) can sweetened condensed milk
  2. 1 (6 ounce) can evaporated milk
  3. 6 ounces milk
  4. 1 teaspoon vanilla extract
  5. 1 teaspoon ground cinnamon
  6. 4 cups day-old 12-grain bread (such as Oroweat®), cut into 1-inch cubes
  7. ¾ cup chopped walnuts
  8. ½ cup raisins
  9. 2 ounces Neufchatel cheese, cubed

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish.
  2. Mix sweetened condensed milk, evaporated milk, milk, vanilla extract, and cinnamon together in a large bowl. Add bread cubes and stir until well incorporated. Let sit for 5 minutes so bread will absorb some of the liquid. Add walnuts and raisins and stir to combine.
  3. Pour mixture into the prepared baking dish. Dot with Neufchatel cheese, pressing down.
  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Let cool 10 minutes before serving.
  5. You can use regular cream cheese instead of Neufchatel cheese, if desired.
  6. Please note the differences in ingredient amounts and yield when using the magazine version of this recipe.

Best bread pudding I’ve ever made!! I did not use the cheese and also I didn’t cook it until a tooth pick came out clean. I think it settles down once it is cooled. I probably cooked it too long until I realized the toothpick was never going to come out clean and it doesn’t need to. The 35 minutes is enough time whether the toothpick is still smeared or not.
