Tossed Salad and Raspberry Vinaigrette

Ingredients

  1. 1 pound mixed field greens
  2. 1 cup dried cranberries
  3. 1 cup walnut pieces
  4. One 22-ounce can mandarin oranges, drained and chilled
  5. 1 1/2 cups grape tomatoes, halved
  6. 1 1/2 cups crumbled feta cheese
  7. 1 cup fresh raspberries
  8. 1/2 cup apple cider vinegar
  9. 1/2 cup aged balsamic vinegar
  10. 2 teaspoons sugar
  11. 1 1/2 tablespoons Dijon mustard
  12. 1/2 cup extra-virgin olive oil

Instructions

  1. For the salad: Place the salad greens in a large bowl. Mix in the cranberries, walnuts, mandarin oranges, grape tomatoes and feta.
  2. For the vinaigrette: Combine the raspberries, vinegars, sugar and mustard in a blender until smooth. Slowly stream in the oil until combined.
  3. Toss the salad with the vinaigrette before serving.

The recipe is flawed…ratio of vinegar to oil should be 1 tbs vinegar to 3 tbs oil, this is all off, just ruined my balsamic which is expensive and lost 1 cup of raspberries…

The recipe for the ingredients of the salad was great. It’s an awesome combo of flavors. The vinaigrette, however, was a completely different story. After reading the reviews, I reduced the amount of vinegar by 2/3, and it was still way too vinegary and, well, disgusting. I added more sugar, more raspberries and some honey, and there was just no cutting through the vinegar taste. Additionally, it was a super gross color of red/brown that wasn’t appetizing at all. I would not recommend the dressing portion of this recipe to my worst enemy.

Well….since I don’t like anything ” sour” I put in less vinegar but still found it sour….I put in so much sugar, I lost count…….but, didnt hate it……will make it again but with some changes….

This was a delicious salad, however, I like some of the others felt the dressing was a bit to strong with the vinegar, I think next round I’ll use less apple cider vinegar or substitute lemon juice for it.
