Tortellini in Brodo

Ingredients

  1. 2 tablespoons extra-virgin olive oil
  2. 2 leeks (white and light green parts only), halved lengthwise, thinly sliced and rinsed
  3. 2 carrots, halved lengthwise and thinly sliced
  4. 2 small celery stalks, thinly sliced
  5. 4 cloves garlic, smashed
  6. 4 cups low-sodium chicken broth
  7. 1 small piece parmesan rind
  8. 2 wide strips lemon zest (removed with a vegetable peeler)
  9. 1 12-ounce bone-in smoked pork chop, diced (bone reserved)
  10. 1 9-ounce package refrigerated cheese or meat tortellini
  11. 1 small head escarole, chopped
  12. Freshly ground pepper

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the leeks, carrots, celery and garlic and cook, stirring occasionally, until the leeks wilt, about 5 minutes. Add 2 cups water, the chicken broth, parmesan rind, lemon zest and pork bone. Bring to a simmer and cook until the vegetables are almost tender, about 15 minutes.
  2. Remove the parmesan rind, lemon zest and pork bone from the pot with a slotted spoon. Bring the broth to a boil over medium heat. Add the tortellini, escarole and diced pork; season with pepper. Cook until the tortellini and escarole are tender, 4 to 5 minutes.

Love this recipe! It has been so popular that I made it twice in a two week period. I did make a few adjustments though. I didn’t use a bone in ham, I just used already diced ham. I also added the juice of one lemon.

After taking the first bite, my husband and I looked at each other and said ‘no do over’.  Having the pork and the parm made it far too salty.  The tortellini had an odd texture in the dish.

This recipe is great but I wish it had more specific measurements for the veggies. I’ve never cooked with leeks before so I thought maybe they would reduce a lot… Well I ended up with way too many leeks. Either way it’s delicious but would be better with less leeks

Loved this! Didn’t find smoked pork, so we just used a little $5 boneless ham. I suggest using no-sodium stock if you do this, as the ham is quite salty. Add salt later to taste.

It’s a great base recipe that you can customize to what you have in the house. I used shredded chicken and baby spinach instead of ham and escarole. Super easy for my meal prep — left the spinach uncooked because it cooked as I was heating it up in the microwave.
