Too-EZ Mac ‘n Cheese

Ingredients

  1. 4 1/2 ounces uncooked whole-wheat-blend rotini pasta (about 2 cups)
  2. 24 ounces frozen broccoli or cauliflower florets in lowfat cheese sauce (about 6 cups)
  3. 3 wedges light spreadable Swiss cheese (recommended: The Laughing Cow)
  4. Salt and freshly ground black pepper, optional
  5. Fresh parsley, for serving, optional

Instructions

  1. In a large pot, prepare pasta according to the instructions on the package; drain well and set aside.
  2. While pasta is cooking, place contents of the broccoli and sauce package in a large microwave-safe bowl. Cover and microwave until sauce has melted and broccoli is hot, 10 to 12 minutes.
  3. Once the bowl is cool enough to handle, remove it from the microwave and add cooked pasta. Unwrap cheese wedges and add those as well.
  4. Mix thoroughly, ensuring that the wedged cheese is evenly distributed and the pasta and broccoli are coated in cheese sauce. Season with salt and pepper, if using. Garnish with parsley, if using. Enjoy!

This was really good.  However I had leftover ground beef with taco mix and put that in as well.  yummy…. I’m going to try the chicken as well with taco mix.  Spices it up but not to much.

No kidding on the Too-EZ Mac…wow! I did incorporate a little Velveeta cheese too, added a sprinkle of parm and the kids gobbled it up! I like the suggestion for chicken and think it would work well with this dish!

For young kids or those who do not like vegetables- I recommend using the cauliflower with cheese sauce and after heating it up, blending it all together until the cauliflower has disappeared and it just looks like cheese sauce. This way the kids will never know that there are vegetables in there! You could try it with broccoli, but in my experience, the cheese sauce will have an unappetizing, green-ish hue to it.

My husband just whipped this up for us using one 12 oz. bag of Green Giant Valley Fresh Broccoli. The dish was delicious! I love mac n cheese, but it is so high in fat. This was just as good and much faster. We’ll be eating this a lot!
