The ideal recipe for sangria for summer parties that I have been able to create! A delicious Spanish red wine, like Garnacha, is what I prefer to use.

Ingredients

  1. 2 tomatoes, chopped
  2. 1 cucumber, peeled and diced
  3. 1 onion, chopped
  4. 1 tablespoon lemon juice
  5. salt and ground black peper to taste

Instructions

  1. Combine tomatoes, cucumber, and onion in a salad bowl. Sprinkle with lemon juice; season with salt and black pepper. Mix until well combined. Place in the refrigerator to chill before serving.

I didn’t change anything. I used the tomato, cucumber, and onion from my garden. I’ve made tomato cucumber salad many times, but wanted to try a different way. I’d never used lemon juice before. I’ve always used oil and vinegar in the past.

We loved the salad and it used our fresh garden vegetables. I did add a small amount of lemon flavored olive oil, garlic wine vinegar, and a dash of erythritol.

Loved this salad, great flavor, added thinly chopped spinach cause I had some on hand that I didn’t want to spoil. It was so yummy!!! Will make this again and again!!

I used about 1/2c sweet onion, most of an English cucumber, and 2 tomatoes. I added 1 Tbsp of meyer lemon infused olive oil to the lemon juice, and topped with some parsley. It made a great summer salad, and was both easy and healthy. I may try adding a stalk of celery next time….

A great recipe as is or to use as a starting point to match your favorite tastes. After reading other reviews, I added 1 T. each of garlic infused olive oil as well as Tuscan Herb olive oil, and 1/2 tsp dried Italian seasoning. Unfortunately, my lemon was far beyond any possible use and I resorted to using bottled lemon juice. The recipe was very forgiving and still tasted absolutely wonderful. I added the salt and pepper needed just prior to serving so as to give the other flavors a chance to blend first.

I used sun sugar cherry tomatoes, cut in half, about 2 T of lemon juice, 2 T of olive oil, some dried basil and parsley, a little onion powder and garlic powder, and salt. I didn’t use any onions. Absolutely delicious. The whole family loved it!

Quite tasty. Did not use a whole onion as that would have been too much. Used only about 1/4 of a red onion. Also added a drizzle of a good quality olive oil. Next time I think that I will add some diced celery as well.

In most salads I use red onion and in this case only half of a small onion. I love this salad when tomatoes are in season. Fresh basil goes well with the ingredients.

This recipe is always a no fail but I added a bit of olive oil for body and used kosher salt instead of table salt to bring out the flavors more. I also used red onion instead of yellow to add a little something extra.

I’ve had this salad a few times before. It’s also great with a dressing of 1/4 c. oil, 2 T. red wine or balsamic vinegar, one T. of water (optional), a bit of salt and a clove of minced garlic. Add the pepper if you want. Let the dressing sit for while. Sprinkle feta on top of the salad.
