Ingredients
- 2 tablespoons butter
- 4 plum tomatoes, seeded and finely chopped
- 2 tablespoons minced dill fronds
Instructions
- Heat butter until golden, saute tomatoes just to warm; add dill off heat, season with salt and pepper. To assemble hot meal: Place a bed of rice on a plate; top with salmon steak and spoon any steaming juices over salmon. Garnish with warm tomato sauce.

I needed a quick sauce to kick up the taste of fresh salmon withought overpowering it. This was delicious. I put the salmon on a bed of basmati pilaf and cooked string beans as a side. It’s a simple and fresh taste – best salmon my husband ever had. Yummy…
I used a can of diced tomotoes and added frozen spinach to the recipe. Before serving, I sprinkled almond slices on top. The crunch was just perfect with the taste and the colors were beautiful! I used it as a side dish with the salmon! Full of flavor!
I am a Paramedic and work along with the Fire Dept.. We take turns cooking and I like to try different things. It is easy to prepare and it had a fabulous taste! Everyone enjoyed it. I am sure my family will also. Thank you for making it so easy.
