Ingredients

  1. 6 roma (plum) tomatoes, diced
  2. 1 small cucumber – peeled, quartered lengthwise, and chopped
  3. 3 green onions, chopped
  4. ¼ cup fresh basil leaves, cut into thin strips
  5. 3 tablespoons crumbled feta cheese
  6. 3 tablespoons olive oil
  7. 2 tablespoons balsamic vinegar
  8. salt and freshly ground black pepper to taste

Instructions

  1. Toss tomatoes, cucumber, green onions, basil, feta, oil, and vinegar together in a large bowl. Season with salt and pepper.

The flavors are bomb. I made it twice once with feta and once with blue cheese as someone suggested because that’s what I had. Both were yumilicious. HOWEVER, in the future I will have the cheese on the side because the balsamic makes it look gross after just a short while. Still tasty just not as pretty as I would like. AND if you have leftovers (I made this for two people so we had a couple days to nosh through it) the cheese becomes overpowering in the salad. Other than my own pickiness, lol. I give it two thumbs up. My favorite way to eat the leftovers is over a bed of spinach. Swoon.

I made this when my son was coming over. I don’t measure. But my son says he only likes potato salad he’s not especially fond of cucumbers. When he ate it he said great potato salad mom. So I think that means it was good.
