Tomato and Bacon Jam

Ingredients

  1. ½ pound smoked bacon
  2. 2 pounds ripe tomatoes, chopped
  3. 1 yellow sweet onion, finely diced
  4. 1 cup white sugar
  5. 2 ½ tablespoons apple cider vinegar
  6. 1 ½ teaspoons salt
  7. ¼ teaspoon black pepper
  8. 1 dash hot pepper sauce (such as Tabasco®) (Optional)

Instructions

  1. Cook the bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. Crumble bacon when cool.
  2. Stir tomatoes, sweet onion, sugar, apple cider vinegar, salt, black pepper, and hot sauce together in a saucepan and bring to a boil, stirring constantly to dissolve sugar. Stir in crumbled bacon and cook over medium heat, stirring often, until the spread is very thick, about 1 hour. Adjust salt and black pepper.
  3. Cool and spoon into a 1-pint glass jar with a lid; keeps refrigerated for 1 week or frozen for 2 months. If freezing, put spread into small jars and let jars thaw in refrigerator overnight before using.

This is a great recipe – and I liked it even better with my two modifications. I used only 1.5 treaspoons of sugar (was tempted to omit altogether and will next time). And I microplaned about 1/2 tsp of fresh garlic into the mix. The jammy consistency is really nice, and a good way to use up a little of my overflowing box of garden tomatoes!

I have a major sweet tooth. I’m gonna start with that because I stinkin’ loved this. Jam is meant to be sweet and I expected it so. I didn’t want to make ketchup, I wanted tomato bacon jam. Thats exactly what I got. Tastes phenomenal hot straight out of the pan, really good cold, too. I’d say the hot version was my favorite, but I guess it would depend on your usage. I sat there dipping ruffles (it’s THAT good) thinking on ways to use this. Burgers, atop salmon, as pizza sauce with a puff pastry crust and Brie cheese, as a side with a bleu cheese smothered steak, with roasted potatoes, even with some roasted veggies. I’m so glad I tried this. Already can’t wait to make it again!

This is an amazing jam. I read the reviews before I decided to try making it. I started with less sugar than the recipe called for, as people recommended and added additional onion and bacon. I only had white vinegar, which worked out just fine. The flavor is incredible, something I need to share with family and friends!

It’s tomato season and my best friends tomato plant has an ABUNDANCE of tomatoes… she gave me at least 10 lbs this weekend. I made one batch of this and then decided I would use up all of them and made 4 batches total. I also cut the sugar in half because our tomatoes were already very sweet. This is out of this world. So. Very. Good.

This is good but we found it much too sweet. I’ll probably make it again but I’ll definitely cut the sugar in half… at least.

I made the Bacon Tomato Jam tonite. I cut back on the sugar to 1/4 cup and even that was a little too much sugar. Other than that, it turned out good!

I have made bacon jam but this is a whole new level!! Had some tomatoes to use up and came across this recipe. I also halved the sugar (figured I could add more if needed and I did add a couple of tablespoons more). I could eat it out of the jar but can’t wait to try it in eggs or on a hamburger!!

I have to say this was so easy to make and so good!! I’m from FL and at a local restaurant they server their own jam with deviled eggs which is what gave me the idea to make this for thanksgiving this year to serve with my deviled eggs. It was a hit!! In fact I wasn’t allowed to leave with the little bit that was left over. I will definitely be making this again.. 10/10 recommend

This is different and delicious. I always think things have too much sugar so I cut it back to 1/4 cup and it was perfect. My husband wasn’t too crazy about the texture of it; he thought it was slimy.

I made this recipe with cherry tomatoes from my garden. I used 3/4 cup of sugar because a whole cup sounded like too much for my family’s tastes. Even with 3/4 cup of sugar it was WAY too sweet for us. I tried to tame down the sweetness with vinegar and by adding the other half of a pound of bacon to the mixture to no avail. I put it in the fridge overnight and, sadly, ended up throwing it out the next morning after tasting it. I will try this recipe again but since cherry tomatoes are already sweet, I will only add about 2 Tlbs. of sugar next time. Maybe even omit the sugar altogether. Thanks for posting this recipe, though, because it gives me one more idea to make with my cherry tomatoes.

Made this to put on chicken burgers and was not disappointed! I only had half the amount of sugar, but used cherry tomatoes from my garden and they were super sweet already. I would recommend halving the sugar amount or even 1/4! Delicious!
