This Tom Collins recipe creates the traditional gin cocktail, which is claimed to have been called after a widespread practical prank that went across the nation. It was created in the late 1800s. But this cocktail is no prank.

Ingredients

  1. 2 ½ cups ice, divided
  2. 2 fluid ounces gin
  3. ¾ fluid ounce lemon juice
  4. ½ fluid ounce simple syrup
  5. 2 fluid ounces club soda
  6. 1 lemon wedge

Instructions

  1. Fill a Collins glass with 1 1/2 cups ice; set aside in the freezer.
  2. Combine gin, lemon juice, and simple syrup in a cocktail shaker. Add 1 cup ice, cover, and shake until chilled.
  3. Strain into the chilled Collins glass. Top with club soda and garnish with lemon wedge.
