Ingredients

  1. Chipotle Mayonnaise:
  2. 1 ½ cups mayonnaise
  3. ½ cup sour cream
  4. ¼ cup chopped fresh cilantro
  5. ¼ cup diced green onions
  6. 1 ½ tablespoons ground chipotle peppers
  7. 1 tablespoon lime juice
  8. 1 tablespoon garlic basil spread (see footnote for recipe link)
  9. 1 teaspoon ground cumin
  10. salt and ground black pepper to taste
  11. Fillings:
  12. 2 tablespoons olive oil
  13. 2 sweet onions, sliced
  14. 1 teaspoon red pepper flakes
  15. 1 teaspoon dried oregano
  16. 2 jalapeno peppers cut into rings, divided
  17. 4 ciabatta sandwich rolls, sliced horizontally
  18. ¼ cup sweet hot mustard, divided
  19. ½ pound sliced Swiss cheese, divided
  20. ½ pound sliced deli roast pork loin, divided
  21. ½ pound sliced ham, divided
  22. 2 dill pickles, cut into strips lengthwise – divided

Instructions

  1. Combine mayonnaise, sour cream, cilantro, green onions, ground chipotle peppers, lime juice, garlic basil spread, cumin, salt, and black pepper in a small bowl. Stir until combined. Cover and refrigerate for at least 1 hour.
  2. Preheat oven to 500 degrees F (260 degrees C).
  3. Heat olive oil in large skillet over medium-high heat. Stir onions, red pepper flakes, and oregano in the hot oil until onions begin to soften, about 5 minutes. Season with salt and ground black pepper to taste. Add half the jalapeno pepper rings and cook until they begin to soften, 2 to 3 minutes. Reserve remaining jalapeno rings.
  4. Spread each ciabatta roll with 1 tablespoon sweet hot mustard and 2 tablespoons chipotle mayonnaise. Evenly divide the Swiss cheese slices, slices of pork loin, ham, dill pickles, and remaining jalapeno rings among the four sandwiches. Top with cooked onion mixture.
  5. Place sandwiches onto a baking sheet and bake in the preheated oven until cheese is melted and bread is toasted and warm, 4 to 5 minutes.

I agree with another reviewer. You would never add jalapeños to a Monte Cristo. This is not a Cuban sandwich as a Cuban sandwich would never have Chipotle anything nor would it be served on a ciabatta roll. This was a more like a fancy Mexican torta or just call it a nice pork sandwich.

Love, love, love! The only problems we had were that it was too big of a sandwich for one person to eat and the spread was good enough. The additional hot mustard was so not needed. In fact, I think the mustard worked against the spread and we love the heat so it was not a heat issue.

Fantastic sandwich. The only changes I made was to the chipotle mayo – instead of the basil/garlic spread I added 1/2 teaspoon each of dried basil and garlic. It turned out fantastic. We’ll definitely make this again whenever we have left over pork loin.

These were delish!! I added chipolte peppers in adobo sauce. It gave the sauce a nice spin. I wasn’t sure whether the completed mayo sauce was to go over the mustard, or if the mustard was to be alone. I mixed them, but I think the mustard should have been on the bottom slice, and the sauce on the top to separate the flavors. That’s why I gave this 4 stars instead of 5.

Excellent recipe for a Cuban sandwich. I subbed my own homemade cuban rolls for the ciabatta and grilled/pressed the sandwiches, which is traditional, rather than baking.

Tried this recipe for my boyfriend’s birthday. He loves spicy food more than me (because I don’t like it) but this recipe was painfully spicy. I halved it and followed the directions exactly with all of the right ingredients except I lacked on the sliced pork loin because my local deli stopped selling it. I think next time I will increase the amount of mayo and decrease the ground chipotle peppers and cumin in the chipotle mayo sauce. Other than that the sandwich was delicious and the chipotle mayonnaise was very creative and different which can be good sometimes! 🙂
