I altered my mother’s recipe for fettuccine Alfredo to produce this dish. I only receive compliments when I prepare this dish. Every time he makes fettuccine Alfredo, my partner scrapes the pan. This dish is not for the health-conscious, I must tell you!

Ingredients

  1. 24 ounces dry fettuccine pasta
  2. 1 cup butter
  3. ¾ pint heavy cream
  4. salt and pepper to taste
  5. 1 dash garlic salt
  6. ¾ cup grated Romano cheese
  7. ½ cup grated Parmesan cheese

Instructions

  1. Bring a large pot of lightly salted water to a boil. Add fettuccine and cook for 8 to 10 minutes or until al dente; drain.
  2. Melt butter into cream in a large saucepan over low heat; add salt, pepper, and garlic salt. Increase the heat to medium; stir in grated Romano and Parmesan cheese until melted and sauce has thickened.
  3. Add cooked pasta to sauce and toss until thoroughly coated; serve immediately.

Made it twice now. The first time I didn’t have romano cheese and just used parmesan. It turned out ok. Made the second batch with all the ingredients and was awesome. I cooked everything and just added the hot Alfredo sauce to the cooked pasta in bowls and my wife and mother in law loved it. Thank you for the recipe!

Absolutely amazing recipe! Definitely only use one stick of butter and I used one cup of heavy cream. Cooked chicken in the crockpot coated with Italian seasoning and pepper and added broccoli florets and it it was better than Olive Garden

I agree too much butter. I’m Sicilian and have making this for over 30 years. I use 1 stick of butter, melted in a 12″ fry pan over med to low heat. Add 16 ounces of par cooked fettuccine noodles and mix to coat butter over all noodles. The important part is getting Imported Parmesan cheese, not domestic. I use half & half in stead of heavy cream. In the frying pan after noodles are coated with melted butter pour enough half & half to almost cover them. Bring to a low boil mixing constantly. Shut heat off, add cheeses a little at a time while mixing, freshly ground pepper/nutmeg. You need to shut the heat so you don’t add too much cheese and make a paste. Mangia!

Note to self, read the reviews. Not to die for. Too much butter. Maybe 1/2 cup? Reheated the next day and poured off the melted butter that had separated itself. It helped but still too buttery. Added shrimp. The Romano/Parmesan mix was good. Still looking for that perfect Fettuccine Alfredo recipe.
