Ingredients

  1. 3 tablespoons canola oil
  2. 1 medium onion, cut into 1-inch dice
  3. 1/8 teaspoon crushed red chile flakes
  4. 1 tablespoon minced garlic
  5. 1 pound boneless, skinless chicken thighs, cut into 1-inch dice
  6. 1 teaspoon kosher salt
  7. 1 teaspoon freshly cracked black pepper
  8. 2 cups sliced cremini mushrooms
  9. 1 cup sliced zucchini, cut into half-moons
  10. 1 (28-ounce) can diced tomatoes, preferably fire roasted (recommended: Muir Glen)
  11. 1/2 cup chicken stock
  12. 1 1/2 cups baby spinach
  13. 3/4 cup heavy cream
  14. 3 tablespoons vodka
  15. 1 pound whole grain penne pasta, cooked al dente
  16. 1/3 cup grated Parmesan, for garnish
  17. 1 Roma tomato, seeded and cut into 1/4-inch dice, for garnish

Instructions

  1. In a large saute pan over high heat, add the oil and when hot, add the onions and saute for 5 to 6 minutes. Add the red chile flakes and garlic and saute for 1 minute longer. Season the chicken with the salt and pepper and add the chicken and cook for 4 to 5 minutes. Add in the mushrooms, zucchini, and canned tomatoes. Add the chicken stock and bring to a simmer. Allow to cook for 5 minutes, and then add the spinach and cream. Cook until heated through and just starting to thicken, about 4 minutes. Finish with the vodka, combine, and turn off the heat. Add the pasta to the pan, combine gently, place on a serving platter or in individual serving bowls, and garnish with the Parmesan and diced tomatoes.

Tried this tonight with a few modifications. I did drain the tomatoes as suggested and added more garlic and crushed red pepper flakes plus used less penne pasta. It was still a little soupy but not too bad. We just used bowls rather than plates. I would make this again.

I stuck close to the recipe and can agree with other reviews that “as is” can be bland so three of four for me. Recommend draining the tomatoes when using the 28oz can otherwise extra seasoning is a MUST. Italian seasonings on the chicken beforehand and while cooking helped layer the flavor overall.. Another day I made this, I cut the recipe in half and found the smaller can size to have less liquid and thickened up well so no draining needed there. Will make this again with spicy Italian sausage added next time as listed on other reviews :

This was a very good recipe albeit the cooking temperatures and times were not very specific. The thing I did not do since it did not specify is drain the canned diced tomatoes. It was too thin and I did add some oregano and basil as one reviewer suggested (but can understand why it would be bland if the tomatoes are not drained-seasoning needs to be upped if you add the juice. Next time I will add more seasoning and drain the tomatoes, the chicken lost some of the flavor from being waterlogged in the sauce-I would remove it before adding the vegetables and then after it thickens up add it back in to finish cooking through.

I looked at other reviews and added 12 oz of hot Italian Sausage and some oregano. It was great and the family enjoyed it. Making it again!

It definitely needed something else, maybe some Kalamanta olives or some bacon. Also the sauce did not thicken. Will toss this one.

My wife and made this dish tonight,we thought if was very good. We did had some basil and oregano. It does make a big meal, we’ll have leftovers for two days. We enjoyed it a lot.

Okay, I hate to rain on the parade of 5 stars, but my daughter and I found this to be bland. I followed the recipe exact. Also, thought it had too much pasta. I added garlic salt and basil; still it needed something. It smelled delicious, but don’t think I’ll waste the ingredients on this one again.

I just made this for my family, added spicy sausage. I added grated garlic and ginger, and some vegs that I had in the frig. I add 1/2 evaporated milk and 1/2 greek yogart to make it thick and a bit healthy. I got 2 thumbs up from the entire family. Thanks Guy!!!!!
